I made Pepparkakor (gingerbread biscuits)!

I was inspired by a friend on Facebook yesterday. She made some gingerbread biscuits and I realised I really like Swedish gingerbread, so decided to make some myself. Jeremy and I went to the supermarket this morning just after 7am (we still seem to wake up at around 5am). I bought the ready-made dough, because I’m too lazy to make my own. While we were there, I spotted Santa!

It was reasonably cold out this morning, around 0 degrees. No snow though. Well, there is snow, but it melts before it hits the ground pretty much! Keep your fingers crossed we’ll get some proper snow before Xmas!

The gingerbread biscuits didn’t take very long to make, but they were a bit fiddly. I tried to get the dough as thin as possible, because I like my biscuits crispy, but some came out a bit thicker than I would have liked. That just means they’re crispy on the outside and a bit soft on the inside.

If I was keen enough, I could ice the biscuits, but I think I’m too lazy for that too! Plus, I think I prefer my gingerbread without the icing, as it’s less sweet that way.

I’ve invited my dad and my brother over for some coffee and biscuits later. A proper ‘fika’. We’ve got some cool stuff that we bought from Japan as well, so we might bring some of those out too. Yum!

      Thank you! I quite like the pig too! Haha. We’ve had a tiny bit of snow here in the last few days, but unfortunately I think it might be a green Christmas 🙁
